Quick & Easy Cranberry Jelly



There's just something about fall that gets to people.  We want to drink lattes and go for walks and we'll pay a premium for anything with pumpkin flavoring.  Its just fun to feel connected with the changing seasons... (one more reason that I secretly wish I was born 100 years ago.)

So for those of you who feel the same way, this is just one more fun (and nourishing) thing you can do to get your "fall fix." 

Quick and Easy Cranberry Jelly

12 ounces of fresh cranberries (I got a bag of Ocean Spray cranberries for $1.68)
1/2 to 1 cup of sugar, to taste
1/2 cup water

Rinse cranberries well and dump into a deep pot with water and sugar.

Bring to a boil and let simmer, covered, until cranberries are soft.

Use potato masher or hand blender to crush the fruit and stir into a thick, syrupy sauce. 

Pour/Strain into a container and chill for 1-2 hours.

Enjoy! We love it spread on top of buttered toast or in peanut butter sandwiches.



And don't be afraid to get a little messy :)
