Sneaky Zucchinis
if you're anything like me (veggie-loving and shamelessly sneaky) then this is the perfect way to get nutrition into your unsuspecting family. i actually told my husband about the ingredients for this little meal, and he was skeptical but we both loved these sandwiches! (although he did say he had to pretend he didn't know what it was...)
Zucchini Grinders
1 tablespoon butter
2 medium zucchini, cubed
1 red pepper (or r.p. flakes)
salt and pepper to taste
1 cup marinara sauce
sliced provolone/shredded mozarella
4 (6 inch) Italian sandwich rolls, split
Preheat the oven to 350 degrees F (175 degrees C).
Melt butter in a skillet over medium heat. Fry the zucchini and red pepper in butter until browned and slightly tender. Season with red pepper flakes (opt.), salt and pepper, and stir in the marinara sauce. Cook and stir until sauce is heated.
Line bread with provolone. Spoon a generous amount of the zucchini mixture into each sandwich roll. (it helped to tear the middle of the roll out to make room.) Top with a handful of shredded mozzarella. Close the rolls, and wrap individually in aluminum foil.
Bake for 15 minutes in the preheated oven, until bread is heated through, and cheese is melted.
and voila- veggie dinner!
