Not-so-bad-for-you Hot Chocolate


They say the best ideas are the ones that seem too simple and easy to be new.  

And while this is probably not a new idea, it's certainly simple. And "why have I never done this before?!" kind of delicious. 

Not-so-bad-for-you Hot Chocolate
yields: just enough for two mugs

2 tsp honey (or more, to taste)
3 T water
2 T cocoa
2-3 cups milk
optional: a few drops of vanilla

Warm honey and water together in a small pot, being careful not to over-heat the honey.
Add cocoa gradually and stir constantly until well blended. 
When just simmering, add milk and vanilla and let the cocoa warm to desired temperature.
